🥣 Ingredients You'll Need:

1/4 cup olive oil (for the sauce)

1/4 cup olive oil (for frying tortillas)

1/4 cup flour

1/2 (16 oz) jar of Johnny G’s Rojo – Mild

1/2 lb ground beef
-
1–2 cups chicken stock (adjust for your preferred sauce thickness)

8 oz shredded Mexican cheese blend

6 to 8 corn tortillas

Casserole dish

Salt, cumin, pepper – to taste (Johnny G’s has loads of flavor, but season to your liking)
🕒 Step-by-Step Instructions:

Preheat your oven to 350°F.

Make the sauce:
In a saucepan, heat 1/4 cup of olive oil over medium heat. Once hot, whisk in the flour and cook for 2–3 minutes until golden brown. Slowly add the chicken stock and Johnny G’s salsa, stirring constantly. Keep adding broth gradually to reach your desired consistency. Let it simmer, stirring regularly, for about 20 minutes. -
Cook the beef:
While the sauce is simmering, cook your ground beef in a skillet. Season with salt, pepper, garlic, and cumin (or whatever you like). Keep it simple — the salsa packs a punch. -
Assemble:
Pour a thin layer of sauce into the bottom of your casserole dish. -
Prep the tortillas:
Heat a small skillet with the other 1/4 cup of olive oil over low-medium heat. Lightly fry each tortilla to soften. Fill with a spoonful of the seasoned beef and a sprinkle of cheese. Roll it up and place seam-side down in the dish. Repeat until all tortillas are filled and lined up. -
Top it off:
Pour the remaining enchilada sauce over the rolled tortillas. Add more shredded cheese on top and a sprinkle of pepper if you’d like. -
Bake:
Cover the dish with foil and bake for 15 minutes. Then remove the foil and bake for another 10 minutes until bubbly and golden. -
Let it rest:
Remove from oven and let cool slightly before serving.
