Johnny G’s Lazy Legend Chicken Tortilla Soup

🥣 What You’ll Need:
1 (16 oz) jar of Johnny G’s Rojo (mild or medium)
2 lbs chicken breast or boneless thighs (your call)
1 (32 oz) box of chicken stock
8 oz shredded or cubed Monterey Jack or go with Pepper Jack for that little kick
Optional: a handful of frozen corn if you’re feeling wild
🕒 What You’ll Do:
Toss everything into your slow cooker. Seriously. No chopping, no measuring. Just get it all in there, cover it, and cook on low for 6–8 hours or high for 4–5 hours.
Once the chicken is falling-apart tender, shred it with a couple of forks and stir it back in.
🥑 Garnish Game Strong:
Top your bowl with any (or all) of the following:
Fresh avocado slices
A squeeze of lime
Chopped cilantro
Thinly sliced radish
Tortilla strips or crushed chips for that perfect crunch
Boom. That’s it. Cozy, cheesy, spicy comfort in a bowl—and all thanks to that jar of Johnny G’s. Make it once and it’ll be on your “repeat” list all year long.

Met you a while ago at the Wolfforth Farmers market in when you lived in Lubbock. I remember making this during the winter after buying salsa from you when it was 20 degrees outside. I added some whole pinto beans to mine. Lovely flavor and very little work. Thank you as always. I look forward to my next Johnny G’s creation. Also please add your Fajita marinade. I do remember talking about that.
